Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic powder, salt, and pepper.
- Add chicken fillet and coat evenly.
- Place chicken on a baking sheet and surround with broccoli and cherry tomatoes.
- Drizzle lemon juice over the vegetables and chicken.
- Bake for 25-30 minutes until chicken is cooked through.
- Meanwhile, cook quinoa according to package instructions.
- Serve chicken and vegetables over a bed of quinoa.
