This Fideo with Potatoes and Ground Beef is a hearty, one-pan comfort meal full of rich flavor and homestyle goodness.

- 2 tablespoons vegetable oil
- 7 ounces about 1½ cups fideo noodles (or broken thin spaghetti)
- 1 pound ground beef (80/20 or lean)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 2 medium russet potatoes (peeled and diced (½-inch cubes))
- 1 8-ounce can tomato sauce
- 2 cups low-sodium beef broth (plus more as needed)
- 1 cup water
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika (optional)
- Salt and black pepper (to taste)
- Fresh cilantro or parsley (chopped (for garnish))
Instructions
- In a large skillet or deep sauté pan, heat the oil over medium heat. Add the fideo noodles and stir constantly for 3–5 minutes until golden brown and fragrant. Remove to a bowl and set aside.
- In the same skillet, add the ground beef and onion. Cook over medium-high heat for about 5–6 minutes until the meat is no longer pink. Drain any excess grease if needed. Add the minced garlic and cook 1 more minute.
- Stir in the diced potatoes, cumin, chili powder, paprika, salt, and pepper. Cook for 2–3 minutes to let the spices bloom and coat everything evenly.
- Pour in the tomato sauce, beef broth, and water. Stir to combine, then add back the toasted fideo noodles. Bring the mixture to a boil, then reduce heat to low and cover.
- Simmer for 10–12 minutes, stirring occasionally, until the noodles and potatoes are tender and most of the liquid has been absorbed. If it becomes too thick before the potatoes are soft, add a splash more broth or water.
- Taste and adjust seasoning if needed. Garnish with chopped cilantro or parsley and serve hot — straight from the pan!
