- 2 large (9-inch) flour tortillas (seasonal colors if available)
- 2 cups shredded cheese (cheddar, Monterey Jack, or your favorite blend)
- Nonstick spray or butter for cooking
- Seasonal cookie cutters
Instructions
- Assemble the quesadilla. Heat a skillet or griddle over medium heat. Spray with non-stick cooking spray. Place one tortilla in the pan and sprinkle with shredded cheese. Top with the second tortilla.
- Cook until golden. Toast for 2–3 minutes per side, until lightly golden and the cheese is fully melted. Remove from heat and place on a wood cutting board.
- Cut into shapes. Press your cookie cutter firmly into the quesadilla to create fun seasonal shapes. Use a paring knife to trim the edges and create crisp, defined edges.
- Serve and enjoy. Each quesadilla yields about 5 shaped pieces, depending on cutter size. Serve with salsa, guacamole, or sour cream for dipping.
