  • 46 small to medium oranges, peeled and sliced into ¼ inch rounds
  • 1½ tablespoons butter or olive oil (melted)
  • 3½ tablespoons cane sugar or Demerara sugar
  • 1¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk (dairy or non-dairy like almond milk)
  • ⅓ cup extra-virgin olive oil
  • 1 cup cane sugar
  • 1 tablespoon apple cider vinegar or white vinegar
  • 2 teaspoons vanilla extract
  • Zest from 1 orange

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan and optionally line the bottom with parchment paper for easier removal.
  2. Pour the melted butter or olive oil into the pan and swirl to coat the bottom.
  3. Sprinkle the sugar evenly over the butter, creating a caramelized base.
  4. Arrange the orange slices in a circular pattern, starting from the center and working outwards, slightly overlapping each slice.
  5. In a large bowl, whisk together the flour, baking powder, and salt.
  6. In a separate bowl, mix the milk, olive oil, vanilla, sugar, vinegar, and orange zest until well combined.
  7. Pour the wet ingredients into the dry and mix until just combined. Do not over-mix.
  8. Gently pour the batter over the orange slices and spread it evenly using a spatula.
  9. Bake for 25-35 minutes, or until the cake is golden and a toothpick inserted comes out clean.
  10. Allow the cake to cool in the pan for 5-10 minutes. Then, carefully run a knife around the edges and invert the cake onto a plate.
  11. Let the cake cool completely, slice, and enjoy!
