- 4–6 small to medium oranges, peeled and sliced into ⅛–¼ inch rounds
- 1½ tablespoons butter or olive oil (melted)
- 3½ tablespoons cane sugar or Demerara sugar
- 1¾ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk (dairy or non-dairy like almond milk)
- ⅓ cup extra-virgin olive oil
- 1 cup cane sugar
- 1 tablespoon apple cider vinegar or white vinegar
- 2 teaspoons vanilla extract
- Zest from 1 orange
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan and optionally line the bottom with parchment paper for easier removal.
- Pour the melted butter or olive oil into the pan and swirl to coat the bottom.
- Sprinkle the sugar evenly over the butter, creating a caramelized base.
- Arrange the orange slices in a circular pattern, starting from the center and working outwards, slightly overlapping each slice.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, mix the milk, olive oil, vanilla, sugar, vinegar, and orange zest until well combined.
- Pour the wet ingredients into the dry and mix until just combined. Do not over-mix.
- Gently pour the batter over the orange slices and spread it evenly using a spatula.
- Bake for 25-35 minutes, or until the cake is golden and a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 5-10 minutes. Then, carefully run a knife around the edges and invert the cake onto a plate.
- Let the cake cool completely, slice, and enjoy!
