Description
Creamy Tuscan Salmon is a rich dish combining buttery salmon fillets with a creamy parmesan sauce, fresh spinach, garlic, and sweet cherry tomatoes.

- 4 salmon fillets
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
Instructions
- Season both sides of the salmon fillets with salt and pepper. Heat butter in a large skillet over medium-high heat and cook the salmon for 4-5 minutes on each side until golden and cooked through. Remove the salmon from the skillet and set it aside.
- In the same skillet, add garlic and sauté for 30 seconds. Add the cherry tomatoes and cook for 3-4 minutes until they begin to soften.
- Pour in the heavy cream and bring it to a simmer. Stir in the parmesan cheese and let it melt, thickening the sauce for 3-4 minutes.
- Stir in spinach and cook for 2 minutes until wilted. Add chopped basil for added flavor.
- Return the salmon fillets to the skillet, spoon the creamy sauce over them, and cook for another 2-3 minutes until heated through.
- Garnish with more fresh basil and serve immediately.
