Description

Creamy Tuscan Salmon is a rich dish combining buttery salmon fillets with a creamy parmesan sauce, fresh spinach, garlic, and sweet cherry tomatoes.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Season both sides of the salmon fillets with salt and pepper. Heat butter in a large skillet over medium-high heat and cook the salmon for 4-5 minutes on each side until golden and cooked through. Remove the salmon from the skillet and set it aside.
  2. In the same skillet, add garlic and sauté for 30 seconds. Add the cherry tomatoes and cook for 3-4 minutes until they begin to soften.
  3. Pour in the heavy cream and bring it to a simmer. Stir in the parmesan cheese and let it melt, thickening the sauce for 3-4 minutes.
  4. Stir in spinach and cook for 2 minutes until wilted. Add chopped basil for added flavor.
  5. Return the salmon fillets to the skillet, spoon the creamy sauce over them, and cook for another 2-3 minutes until heated through.
  6. Garnish with more fresh basil and serve immediately.
