Description

A healthy turkey salad with dried cranberries, lettuce, and various toppings.


Ingredients

Scale
  • 4 cups romaine lettuce
  • 2/3 cup turkey (cubed)
  • 2 tablespoons balsamic dressing
  • 2 tablespoons dried cranberries
  • 2 tablespoons red onion (thinly sliced)
  • 2 tablespoons walnuts
  • 1/2 cup chickpeas (drained)
  • 2 tablespoons blue cheese

Instructions

  1. Place chopped lettuce in a mixing bowl and drizzle dressing over the top. Use tongs to toss together. Divide into 2 serving bowls.
  2. Add chickpeas and 2/3 cup turkey as generously as you please to each bowl.
  3. Accent with dried cranberries, red onion slices, walnuts and blue cheese.
  4. Serve and store any leftovers in a sealed container in the refrigerator.
