- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup orange juice
- 1/4 cup brandy
Instructions
- Preheat the oven to 325°F (160°C).
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the orange juice and brandy.
- Fold in the mixed dried fruits and chopped nuts.
- Pour the batter into a greased and floured cake pan.
- Bake for 1.5 to 2 hours, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
- Store in an airtight container for at least a week before serving to enhance the flavors.
