- 2 cups mixed dried fruits (raisins, currants, chopped dates)
- 1 cup chopped nuts (walnuts, almonds)
- 1 cup unsweetened applesauce
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup orange juice
- 1/4 cup brandy (optional)
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the mixed dried fruits and nuts.
- In another bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the applesauce, orange juice, and brandy (if using).
- In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the dried fruit and nut mixture.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
