Ingredients

  • 2 cups mixed dried fruits (raisins, currants, chopped dates)
  • 1 cup chopped nuts (walnuts, almonds)
  • 1 cup unsweetened applesauce
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup orange juice
  • 1/4 cup brandy (optional)

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the mixed dried fruits and nuts.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the applesauce, orange juice, and brandy (if using).
  6. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Fold in the dried fruit and nut mixture.
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
