- 1 liter filtered water
- 1 cup kosher salt
- 1 whole lemon (substitute with lime if desired)
- 1 tablespoon thyme (can substitute with rosemary or sage)
- Aromatics (Bay Leaves, Coriander Seeds, Peppercorns, etc.)
- 1 whole turkey (frozen, remove neck and giblets)
Instructions
- In a large vessel, bring 1 liter of water to a boil and dissolve the salt completely. Once dissolved, mix in 4 liters of cold water and add the aromatics; let the brine cool down to room temperature.
- Take your frozen turkey out of the packaging and remove the neck and any giblets. Trim any excess skin, making sure it’s ready for a delicious brining experience.
- When the brine reaches a lukewarm temperature, fully immerse the turkey, ensuring it’s covered with the brine. Place it in the refrigerator and allow it to brine overnight for maximum flavor and tenderness.
- After brining, carefully remove the turkey from the liquid and give it a quick rinse under cold water. Pat the turkey dry with paper towels and preheat your oven to 160°C (320°F).
- Stuff the turkey’s cavity with the whole lemon and a few sprigs of thyme. Roast in the preheated oven, planning for roughly 30 minutes per 500 grams until it reaches the safe internal temperature of 75°C (165°F).
- Once cooked, remove the turkey from the oven and let it rest for 15-20 minutes, covered with foil.
