- 1 loaf Bolillo or baguette
- 4 oz Chorizo
- 4 oz Carnitas
- 1/2 cup Refried beans
- 1 cup Lettuce
- 1 medium Tomato
- 1 medium Avocado
- 1 tbsp Chipotle mayo
Instructions
- Slice your bolillo or baguette lengthwise, creating a pocket for all those flavorful fillings.
- In a skillet over medium heat, cook the chorizo and carnitas together until heated through and slightly crispy.
- Spread a generous layer of refried beans inside the bread, then layer on the cooked meats. Add lettuce, tomato slices, and avocado.
- Drizzle chipotle mayo over the top of your sandwich.
- If you like a little extra crunch, pop the assembled sandwich back in the skillet for a couple of minutes.
