- 1 tablespoon Kombu dashi granules
- 2 tablespoons Soy sauce
- 2 cups Cooked Japanese short grain rice
- 6 pieces Dried shiitake mushrooms (rehydrated)
- 1 cup Yuba
- 2 stalks Green onions (sliced)
- 2 cups Spinach
Instructions
- Over medium heat, pour in the soy milk, followed by the kombu dashi granules and soy sauce. Stir gently until the mixture begins to boil, then reduce the heat to a simmer for rich flavor.
- Add the cooked Japanese short grain rice, rehydrated shiitake mushrooms, and yuba into the pot. Stir well to blend all the delightful flavors together with the fragrant broth.
- Toss in the sliced green onions and spinach, stirring to incorporate. Let everything simmer for a few minutes, allowing the spinach to wilt and the flavors to meld beautifully.
- Turn off the heat and cover the pot with the lid. Allow it to rest for about 5 minutes; this will thicken the soup and intensify the flavors. Serve and enjoy the comforting warmth!
