Description

Comforting Tonyuu Zosui: A Heartwarming Soy Milk Rice Soup

Ingredients

Scale
  • 4 cups Unsweetened soy milk
  • 1 tablespoon Kombu dashi granules
  • 2 tablespoons Soy sauce
  • 2 cups Cooked Japanese short grain rice
  • 6 pieces Dried shiitake mushrooms (rehydrated)
  • 1 cup Yuba
  • 2 stalks Green onions (sliced)
  • 2 cups Spinach

Instructions

  1. Over medium heat, pour in the soy milk, followed by the kombu dashi granules and soy sauce. Stir gently until the mixture begins to boil, then reduce the heat to a simmer for rich flavor.
  2. Add the cooked Japanese short grain rice, rehydrated shiitake mushrooms, and yuba into the pot. Stir well to blend all the delightful flavors together with the fragrant broth.
  3. Toss in the sliced green onions and spinach, stirring to incorporate. Let everything simmer for a few minutes, allowing the spinach to wilt and the flavors to meld beautifully.
  4. Turn off the heat and cover the pot with the lid. Allow it to rest for about 5 minutes; this will thicken the soup and intensify the flavors. Serve and enjoy the comforting warmth!
