  • 1 tablespoon fresh basil, chopped
  • ¼ cup grated Parmesan cheese, for garnish

Instructions

  1. Prep the tomatoes: Place tomatoes in a large pot and cover with cold water. Bring just to a boil, then drain and refill with cold water. Peel off the skins, chop the tomatoes into small pieces, and set aside.
  2. Cook the pasta: Bring a large pot of lightly salted water to a boil. Cook the angel hair pasta until tender but firm, about 4–5 minutes. Drain without rinsing.
  3. Make the sauce: Heat olive oil in a wide skillet over medium heat. Add crushed garlic and sauté gently until fragrant but not browned. Stir in tomato paste.
  4. Add tomatoes and season: Add chopped tomatoes, salt, and black pepper. Reduce heat and simmer gently until the pasta is ready. Stir in basil at the end.
  5. Combine and rest: Toss drained pasta with a small drizzle of olive oil, then add to the sauce. Mix gently to coat. Keep warm over very low heat, uncovered, for about 10 minutes.
  6. Serve: Garnish generously with grated Parmesan cheese and serve warm.
