- 1 large onion, finely diced
- 2 cloves garlic, minced

- 3/4 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 teaspoon mustard seeds
- 1/2 teaspoon chili flakes (optional)
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Chop tomatoes, onions, and garlic. Measure all ingredients.
- Heat olive oil in a large saucepan over medium heat. Cook onions until translucent (about 5 minutes). Stir in garlic and ginger until fragrant.
- Add chopped tomatoes, mustard seeds, chili flakes, and salt. Stir in vinegar and brown sugar.
- Reduce heat and simmer uncovered for 45-60 minutes, stirring occasionally, until thick and jam-like.
- Taste and adjust sugar or vinegar for balance. Let cool slightly.
- Transfer to sterilized jars, seal tightly, and refrigerate.
