Ingredients

  • 1 baguette, sliced into 1/2-inch thick rounds
  • 2 tablespoons olive oil, plus more for brushing
  • 2 pounds ripe tomatoes, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic glaze (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil.
  3. Bake for 8-10 minutes, or until the bread is lightly golden and toasted. Remove from oven and set aside.
  4. In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, and 2 tablespoons of olive oil.
