Deliciously Crispy Tirokroketes
Ingredients

- 300g feta cheese, crumbled
- 200g grated cheese (mozzarella or kasseri)
- 300g potatoes, boiled and mashed
- 2 large eggs
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 100g seasoned breadcrumbs
- Vegetable oil or olive oil (enough for frying)
Instructions
- Boil the potatoes until fork-tender. Drain and mash in a large bowl.
- Add crumbled feta, grated cheese, chopped parsley, beaten eggs, salt, and pepper. Mix until well combined.
- Using your hands or a scoop, take small portions of the mixture and shape them into oval or round balls.
- Roll each ball in seasoned breadcrumbs until fully coated.
- In a deep skillet or pot, heat enough oil to cover the bottom about an inch deep over medium-high heat.
- Carefully place several croquettes into the hot oil without overcrowding.
- Fry for about three minutes on each side until golden brown and crispy.
- Transfer fried tirokroketes onto paper towels to drain excess oil.
- Serve warm with tzatziki or your favorite dipping sauce.
