Deliciously Crispy Tirokroketes


Ingredients

Scale
  • 300g feta cheese, crumbled
  • 200g grated cheese (mozzarella or kasseri)
  • 300g potatoes, boiled and mashed
  • 2 large eggs
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 100g seasoned breadcrumbs
  • Vegetable oil or olive oil (enough for frying)

Instructions

  1. Boil the potatoes until fork-tender. Drain and mash in a large bowl.
  2. Add crumbled feta, grated cheese, chopped parsley, beaten eggs, salt, and pepper. Mix until well combined.
  3. Using your hands or a scoop, take small portions of the mixture and shape them into oval or round balls.
  4. Roll each ball in seasoned breadcrumbs until fully coated.
  5. In a deep skillet or pot, heat enough oil to cover the bottom about an inch deep over medium-high heat.
  6. Carefully place several croquettes into the hot oil without overcrowding.
  7. Fry for about three minutes on each side until golden brown and crispy.
  8. Transfer fried tirokroketes onto paper towels to drain excess oil.
  9. Serve warm with tzatziki or your favorite dipping sauce.
