Ingredients

  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp matcha powder
  • 3/4 cup sugar
  • 1 cup almond milk (dairy-free)
  • 1 tbsp apple cider vinegar
  • 1/4 cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 1 cup icing sugar
  • 2 tbsp almond milk
  • 1 tbsp matcha powder
  • 1 tbsp coconut oil (melted)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease the donut pan.
  2. Mix the almond milk and apple cider vinegar in a small bowl and let sit for 5 minutes.
  3. Sift together flour, baking powder, baking soda, salt, and matcha powder in a large bowl.
  4. Add sugar to the dry ingredients and stir well.
  5. Whisk together liquid ingredients until smooth.
  6. Combine wet and dry ingredients, stirring gently until just mixed.
  7. Fill the donut pan with batter, filling each cavity just over 3/4 full.
  8. Bake for 10-12 minutes, or until a toothpick comes out clean.
  9. Cool for 5 minutes in the pan before transferring to a wire rack.
  10. Dunk half of each donut into the matcha glaze and allow excess to drip back.
  11. Top with decorations if desired and drizzle with plain glaze for extra sweetness.
