- 2 ripe but firm mangoes, julienned
- 1 cup shredded carrots
- 1/2 red bell pepper, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh mint, chopped (optional)
- 1/4 cup roasted peanuts, roughly chopped
- 3 tablespoons fresh lime juice
- 1 tablespoon fish sauce (or soy sauce for vegetarian option)
- 1 tablespoon honey or brown sugar
- 1 teaspoon sesame oil
- 1 small garlic clove, minced
- 1/2 teaspoon grated fresh ginger
- Optional: red chili flakes or thinly sliced chili
Instructions
- Peel mangoes and slice into thin julienne strips using firm mangoes for best texture.
- Thinly slice bell pepper and red onion. Shred carrots if needed.
- In a small bowl, whisk lime juice, fish sauce (or soy sauce), honey, sesame oil, garlic, ginger, and chili flakes if using.
- In a large bowl, toss mango, carrots, bell pepper, onion, cilantro, and mint.
- Pour dressing over salad and toss gently to combine.
- Top with roasted peanuts just before serving.
