- 1/2 cup shredded carrots

- 2 green onions, sliced
- 3 tablespoons fresh lime juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon minced garlic
- 1/2 teaspoon grated fresh ginger
- Optional: red pepper flakes for heat
Instructions
- Season chicken with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook 5–7 minutes per side until golden and fully cooked. Let rest, then slice.
- Thinly slice cucumbers and red onion. Shred carrots and chop cilantro.
- Whisk together lime juice, soy sauce, honey, sesame oil, garlic, ginger, and optional red pepper flakes.
- In a large bowl, combine cucumbers, onion, carrots, cilantro, and green onions. Add sliced chicken on top.
- Drizzle dressing over the salad and toss gently. Serve immediately for best freshness.
