  • 1 tablespoon cornstarch (arrowroot powder as substitute)
  • 1 pound ground chicken or turkey (substitute with chicken breast or lean ground beef)
  • 1 tablespoon vegetable oil (any neutral oil like canola or grapeseed)
  • 3 whole green onions (use both white and green parts)
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 whole red bell pepper (can substitute with other bell peppers)
  • 1 cup carrots (shredded)
  • 1/4 cup cilantro (or parsley as alternative)
  • 1/4 cup peanuts (or cashews or almonds as substitutes)
  • 1 bunch lettuce leaves (romaine hearts or butter lettuce preferred)

Instructions

  1. In a medium bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and cornstarch. Set aside.
  2. Heat vegetable oil in a large non-stick skillet over medium-high heat. Add white parts of green onions, garlic, and ginger; sauté for 30 seconds.
  3. Add ground chicken; cook for 5-7 minutes until no longer pink.
  4. Stir in red bell pepper; cook for 2 minutes, then add carrots and cook for another 2 minutes.
  5. Pour the prepared sauce into the skillet, stirring to coat. Cook for an additional minute until the sauce thickens.
  6. Remove from heat; fold in green parts of green onions, cilantro, and peanuts.
  7. Spoon filling into lettuce leaves, adding optional toppings as desired.

Notes
