- 1/4 cup soy sauce (tamari for gluten-free)
- 1 tablespoon fish sauce
- 2 tablespoons brown sugar (coconut sugar as alternative)
- 1 whole lime (juice from fresh lime preferred)
- 1 tablespoon sesame oil (toasted for stronger flavor)
- 1 tablespoon cornstarch (arrowroot powder as substitute)
- 1 pound ground chicken or turkey (substitute with chicken breast or lean ground beef)
- 1 tablespoon vegetable oil (any neutral oil like canola or grapeseed)
- 3 whole green onions (use both white and green parts)
- 2 cloves garlic (minced)
- 1 teaspoon ginger (grated)
- 1 whole red bell pepper (can substitute with other bell peppers)
- 1 cup carrots (shredded)
- 1/4 cup cilantro (or parsley as alternative)
- 1/4 cup peanuts (or cashews or almonds as substitutes)
- 1 bunch lettuce leaves (romaine hearts or butter lettuce preferred)
Instructions
- In a medium bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and cornstarch. Set aside.
- Heat vegetable oil in a large non-stick skillet over medium-high heat. Add white parts of green onions, garlic, and ginger; sauté for 30 seconds.
- Add ground chicken; cook for 5-7 minutes until no longer pink.
- Stir in red bell pepper; cook for 2 minutes, then add carrots and cook for another 2 minutes.
- Pour the prepared sauce into the skillet, stirring to coat. Cook for an additional minute until the sauce thickens.
- Remove from heat; fold in green parts of green onions, cilantro, and peanuts.
- Spoon filling into lettuce leaves, adding optional toppings as desired.
Notes
- Serve with additional lime wedges for extra flavor.
- Adjust spice level by adding chili sauce if desired.
