- 1 lb chicken breast or thighs
- 2 tablespoons red curry paste
- 1 tablespoon oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 can (13.5 oz) full-fat coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 tablespoon lime juice
- 1/4 cup chopped fresh basil or cilantro
Instructions
- Heat oil in a large skillet over medium heat. Add onion and cook until softened, about 3–4 minutes.
- Add garlic and ginger and sauté for 1 minute until fragrant.
- Stir in red curry paste and cook for 1 minute to release its flavors.
- Pour in coconut milk, stirring well to combine with the curry paste.
- Add chicken pieces and simmer for 10–12 minutes, or until cooked through.
- Add bell peppers and cook for another 5 minutes until tender but crisp.
- Stir in fish sauce, brown sugar, and lime juice. Adjust seasoning to taste.
- Turn off the heat and stir in chopped fresh basil or cilantro before serving.
