A quick and flavorful Thai dish featuring chicken, Thai basil, and a savory sauce, perfect for a busy weeknight meal.
Ingredients

- 225g chicken thigh fillets, skinless boneless, cut into bite size pieces
- 1 green onion, cut into 4cm lengths
- 1 cup Thai basil leaves, loosely packed
- 2 garlic cloves, finely chopped
- 1 birds eye or Thai chilli, deseeded and finely chopped
- 1 1/2 tbsp oil (peanut, vegetable or canola)
- 2 tsp oyster sauce
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 2 tbsp water
- Steamed jasmine rice for serving
Instructions
- Heat oil in a skillet over medium-high heat.
- Add chicken and cook until golden brown.
- Add garlic and chilli, stir-fry until fragrant.
- Mix in green onion and cook for a minute.
- In a bowl, combine oyster sauce, light soy sauce, dark soy sauce, sugar, and water.
- Pour sauce over chicken and stir to coat.
- Add Thai basil and stir until wilted.
- Serve hot with steamed jasmine rice.
