A quick and flavorful Thai dish featuring chicken, Thai basil, and a savory sauce, perfect for a busy weeknight meal.


Ingredients

  • 225g chicken thigh fillets, skinless boneless, cut into bite size pieces
  • 1 green onion, cut into 4cm lengths
  • 1 cup Thai basil leaves, loosely packed
  • 2 garlic cloves, finely chopped
  • 1 birds eye or Thai chilli, deseeded and finely chopped
  • 1 1/2 tbsp oil (peanut, vegetable or canola)
  • 2 tsp oyster sauce
  • 1 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 2 tbsp water
  • Steamed jasmine rice for serving

Instructions

  1. Heat oil in a skillet over medium-high heat.
  2. Add chicken and cook until golden brown.
  3. Add garlic and chilli, stir-fry until fragrant.
  4. Mix in green onion and cook for a minute.
  5. In a bowl, combine oyster sauce, light soy sauce, dark soy sauce, sugar, and water.
  6. Pour sauce over chicken and stir to coat.
  7. Add Thai basil and stir until wilted.
  8. Serve hot with steamed jasmine rice.
