Description

A comforting Tator Tot Egg Casserole that combines fluffy eggs, crispy tater tots, cheese, and savory sausage for a hearty breakfast or brunch.

Ingredients

Scale
  • 4 cups frozen tater tots
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 1 pound breakfast sausage
  • 1 cup whole milk
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Heat olive oil in a large skillet over medium heat. Add the breakfast sausage and cook until browned, breaking it apart with a spoon. Drain excess grease.
  3. Add the diced onion and bell pepper to the skillet with the sausage. Cook until they are softened and fragrant, then remove the skillet from the heat.
  4. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until the mixture is smooth and well combined.
  5. Lightly grease a large casserole dish with oil or cooking spray.
  6. Spread half of the frozen tater tots evenly across the bottom of the prepared casserole dish.
  7. Layer the cooked sausage and vegetable mixture over the tater tots.
  8. Sprinkle one cup of the shredded cheddar cheese over the sausage and vegetable layer.
  9. Pour the egg mixture evenly over the top of the casserole, ensuring it covers all the layers.
  10. Add the remaining frozen tater tots in a single layer across the surface of the casserole.
  11. Sprinkle the final cup of cheddar cheese over the tater tots.
  12. Bake uncovered for 40 to 45 minutes, or until the eggs are fully set and the tater tots on top are golden brown and crispy.
  13. Let the Tator Tot Egg Casserole rest for a few minutes before slicing and serving.

Notes

  • For a lighter version, use turkey sausage or omit the meat and add extra vegetables like spinach, mushrooms, or zucchini.
  • Add chopped jalapeños or chili flakes for a spicier kick.
  • Experiment with different cheeses like mozzarella, pepper jack, or gouda.
  • For an extra crispy topping, you can broil the casserole for the last three minutes of baking.
  • This Tator Tot Egg Casserole reheats well for quick breakfasts.
