Ingredients

  • 2 cups cauliflower pieces
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian herb blend
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon balsamic vinegar
  • 1/2 cup vegetable broth

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine carrots, bell peppers, zucchini, red onion, and cauliflower.
  3. Drizzle olive oil and add garlic powder, Italian herbs, black pepper, salt, balsamic vinegar, and vegetable broth. Toss to coat.
  4. Spread vegetables on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until tender and golden brown.
