Description

This Tasty Korean Winter Soup is a comforting, nourishing dish made with beef short ribs, Korean radish, and aromatics simmered slowly into a rich, clear broth.


Ingredients

  • 1 1/2 lbs beef short ribs
  • 5 whole garlic cloves (or 2 tbsp chopped garlic)
  • 2 thick slices ginger
  • 3 dried or fresh green onion pieces
  • 4 green onions or 1 Korean leek (for garnish)
  • 1/2 medium Korean radish (mu)
  • 1 whole yellow onion
  • 1 tbsp soy sauce
  • 1 1/2 tsp sea salt
  • 10 cups water

Instructions

  1. Rinse beef short ribs and soak in cold water for 30–60 minutes to remove excess blood.
  2. Peel and prepare aromatics: slice garlic, ginger, yellow onion, and chop green onions or leek.
  3. In a large stockpot, combine soaked ribs, aromatics, and 10 cups water. Bring to a boil, then reduce to simmer.
  4. Skim off any foam that rises to the top to maintain a clear broth.
  5. Simmer for 1 hour, then add sliced radish. Cook for another 20–30 minutes until radish is tender.
  6. Stir in soy sauce and sea salt. Adjust seasoning to taste.
  7. Simmer for a few more minutes, then serve hot, garnished with green onion or leek slices.
