- 4 green onions or 1 Korean leek (for garnish)
- 1/2 medium Korean radish (mu)
- 1 whole yellow onion
- 1 tbsp soy sauce
- 1 1/2 tsp sea salt

Instructions
- Rinse beef short ribs and soak in cold water for 30–60 minutes to remove excess blood.
- Peel and prepare aromatics: slice garlic, ginger, yellow onion, and chop green onions or leek.
- In a large stockpot, combine soaked ribs, aromatics, and 10 cups water. Bring to a boil, then reduce to simmer.
- Skim off any foam that rises to the top to maintain a clear broth.
