These BBQ Beef Meatloaf Muffins take everything you love about classic meatloaf and make it bite-sized and weeknight-ready. Glazed with tangy sugar-free BBQ sauce and packed with sneaky veggies, they’re moist, flavorful, and fun to eat.

- 2 lbs lean ground beef
- 1 cup finely chopped onion
- 1 cup shredded zucchini or carrot (squeeze excess moisture)
- 1 cup panko or breadcrumbs
- ½ cup milk or broth
- 2 large eggs
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp pepper
- ¾ cup sugar-free BBQ sauce, divided
- Optional: shredded cheese for topping
Instructions
- Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
- In a small bowl, soak breadcrumbs in milk for 2 minutes.
- In a large bowl, combine ground beef, soaked breadcrumbs, eggs, onion, zucchini, garlic powder, paprika, salt, and pepper. Mix gently until just combined.
- Spoon mixture evenly into muffin cups and press down lightly.
- Brush tops with half of the BBQ sauce.
- Bake for 20–25 minutes, then top with remaining BBQ sauce (and cheese, if using) and bake another 5 minutes.
- Let rest 5 minutes before removing from pan.
