Description

These BBQ Beef Meatloaf Muffins take everything you love about classic meatloaf and make it bite-sized and weeknight-ready. Glazed with tangy sugar-free BBQ sauce and packed with sneaky veggies, they’re moist, flavorful, and fun to eat.


Ingredients

  • 2 lbs lean ground beef
  • 1 cup finely chopped onion
  • 1 cup shredded zucchini or carrot (squeeze excess moisture)
  • 1 cup panko or breadcrumbs
  • ½ cup milk or broth
  • 2 large eggs
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp pepper
  • ¾ cup sugar-free BBQ sauce, divided
  • Optional: shredded cheese for topping

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. In a small bowl, soak breadcrumbs in milk for 2 minutes.
  3. In a large bowl, combine ground beef, soaked breadcrumbs, eggs, onion, zucchini, garlic powder, paprika, salt, and pepper. Mix gently until just combined.
  4. Spoon mixture evenly into muffin cups and press down lightly.
  5. Brush tops with half of the BBQ sauce.
  6. Bake for 20–25 minutes, then top with remaining BBQ sauce (and cheese, if using) and bake another 5 minutes.
  7. Let rest 5 minutes before removing from pan.
