A fun twist on traditional pasta salad, combining taco flavors with hearty pasta and fresh ingredients.


Ingredients

  • 1 pound rotini
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans, drained and rinsed
  • 8 ounces canned corn, drained
  • 2 cups halved cherry tomatoes
  • 2 cups shredded Fiesta blend cheese
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • 9 ounces Nacho Cheese Doritos, crushed
  • 2 cups shredded iceberg lettuce

Instructions

  1. Cook rotini according to package instructions; drain and rinse.
  2. Brown ground beef in a skillet; drain grease and add taco seasoning.
  3. In a large bowl, combine pasta, beef, black beans, corn, tomatoes, cheese, and lettuce.
  4. Add Catalina dressing and sour cream; mix well.
  5. Top with crushed Doritos before serving.
