A fun twist on traditional pasta salad, combining taco flavors with hearty pasta and fresh ingredients.
Ingredients

- 1 pound rotini
- 1 pound lean ground beef
- 1 packet taco seasoning
- 15 ounces canned black beans, drained and rinsed
- 8 ounces canned corn, drained
- 2 cups halved cherry tomatoes
- 2 cups shredded Fiesta blend cheese
- 16 ounces Catalina dressing
- 3 tablespoons sour cream
- 9 ounces Nacho Cheese Doritos, crushed
- 2 cups shredded iceberg lettuce
Instructions
- Cook rotini according to package instructions; drain and rinse.
- Brown ground beef in a skillet; drain grease and add taco seasoning.
- In a large bowl, combine pasta, beef, black beans, corn, tomatoes, cheese, and lettuce.
- Add Catalina dressing and sour cream; mix well.
- Top with crushed Doritos before serving.
