Description

Creamy sweet potatoes stuffed with ricotta, infused with orange zest, honey, and cinnamon, then topped with crunchy toasted almonds.


Ingredients

  • 4 medium sweet potatoes
  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1 teaspoon orange zest
  • 1/2 teaspoon cinnamon
  • 1/4 cup sliced almonds, toasted
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Rub lightly with olive oil and place on a baking sheet.
  3. Roast for 40–45 minutes until tender.
  4. In a bowl, mix ricotta cheese, honey, orange zest, cinnamon, and a pinch of salt until smooth.
  5. Remove sweet potatoes from the oven and let cool slightly.
  6. Slice each open lengthwise and gently fluff the inside with a fork.
  7. Spoon the ricotta mixture into each potato.
  8. Sprinkle toasted almonds on top and garnish with fresh mint if desired.
  9. Serve warm.
