Creamy sweet potatoes stuffed with ricotta, infused with orange zest, honey, and cinnamon, then topped with crunchy toasted almonds.

- 4 medium sweet potatoes
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1 teaspoon orange zest
- 1/2 teaspoon cinnamon
- 1/4 cup sliced almonds, toasted
- 1 tablespoon olive oil
- Salt to taste
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Rub lightly with olive oil and place on a baking sheet.
- Roast for 40–45 minutes until tender.
- In a bowl, mix ricotta cheese, honey, orange zest, cinnamon, and a pinch of salt until smooth.
- Remove sweet potatoes from the oven and let cool slightly.
- Slice each open lengthwise and gently fluff the inside with a fork.
- Spoon the ricotta mixture into each potato.
- Sprinkle toasted almonds on top and garnish with fresh mint if desired.
- Serve warm.

- Adjust honey to taste for sweetness.
