Ingredients
- 1 pound (450g) sausage, casings removed
- 2 large sweet potatoes, peeled and diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, any color, diced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken or vegetable broth
- 1 cup shredded cheddar cheese
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, cook the sausage over medium heat until browned. Break it up with a spoon. Remove sausage and set aside.
- In the same skillet, sauté the diced onion and bell pepper for about 5 minutes until softened.
- Add the minced garlic, smoked paprika, dried thyme, salt, and black pepper. Cook for 1 minute until fragrant.
- In a large bowl, combine the cooked sausage, sautéed vegetables, and diced sweet potatoes. Pour in the broth and mix well.
- Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
- Sprinkle the shredded cheese over the top.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for another 10-15 minutes, until sweet potatoes are tender and cheese is bubbly.
- Garnish with fresh parsley before serving.
