  • 1 pound (450g) sausage, casings removed
  • 2 large sweet potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, any color, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the sausage over medium heat until browned. Break it up with a spoon. Remove sausage and set aside.
  3. In the same skillet, sauté the diced onion and bell pepper for about 5 minutes until softened.
  4. Add the minced garlic, smoked paprika, dried thyme, salt, and black pepper. Cook for 1 minute until fragrant.
  5. In a large bowl, combine the cooked sausage, sautéed vegetables, and diced sweet potatoes. Pour in the broth and mix well.
  6. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  7. Sprinkle the shredded cheese over the top.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Remove the foil and bake for another 10-15 minutes, until sweet potatoes are tender and cheese is bubbly.
  10. Garnish with fresh parsley before serving.
