Description
This Sweet Chili Salmon Bowl is a bold and balanced meal with glazed salmon, black rice, crisp cucumbers, and a spicy-creamy drizzle.

- 1 pound salmon fillets, skin removed and cut into chunks
- ⅓ cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 cup black rice, uncooked
- 1 cucumber, sliced
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- 1 tablespoon olive oil or sesame oil
- 3 tablespoons mayonnaise
- 1 tablespoon sriracha or hot sauce
- 1 tablespoon lime juice
- Salt and pepper, to taste
Instructions
- Heat a non-stick skillet over medium-high heat and prepare a saucepan for rice.
- Mix sweet chili sauce and soy sauce in a bowl. In another bowl, whisk mayonnaise, sriracha, and lime juice for the creamy drizzle.
- Add oil to skillet. Pat salmon dry, season with salt and pepper, and sear for 2–3 minutes per side.
- Brush salmon with sweet chili glaze and cook 1–2 more minutes until caramelized.
- Cook black rice according to package instructions. Slice cucumbers and chop green onions.
- In bowls, layer black rice, salmon, and cucumber. Drizzle with sauce, sprinkle with sesame seeds and green onion.
- Serve warm or room temperature with optional lime wedges.
