Fresh Italian Bread Salad Recipe
Ingredients

- 4 cups crusty bread, cubed
- 3 cups ripe tomatoes, chopped
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh basil leaves
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven and toast bread cubes until golden and crisp.
- Chop tomatoes, slice cucumber, and thinly slice onion.
- Whisk olive oil, vinegar, garlic, salt, and pepper.
- Combine bread and vegetables in a large bowl.
- Pour dressing over and toss gently.
- Let sit for 20–30 minutes to absorb flavors.
- Add basil before serving and toss lightly.
