  • 2 large eggs

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the mixed berries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Gently toss to coat the berries evenly. Pour the berry mixture into the prepared baking dish.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Drop spoonfuls of the sugar cookie batter over the berry filling. Spread it gently with a spatula, leaving some gaps for the berries to peek through.
  8. Place the cobbler in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the cookie topping comes out clean.
  9. Allow the cobbler to cool for about 10-15 minutes before serving. This will help the filling set slightly.
  10. Serve warm, optionally topped with whipped cream or vanilla ice cream for a delightful treat!
