Jumbo pasta shells are filled with a creamy, cheesy mixture and topped with marinara sauce and mozzarella cheese, then baked to perfection. - 12 ounces jumbo pasta shells
- 1 tablespoon kosher salt
- 30 ounces whipped cottage cheese (or ricotta cheese)
- 6 ounces grated Parmesan cheese
- 1 egg
- 1 to 2 garlic cloves, minced
- 1 tablespoon fresh parsley, minced
- ¾ cup fresh basil leaves, finely chopped
- ½ teaspoon salt
- ½ teaspoon fresh ground pepper
- 28 ounces marinara sauce
- 8 ounces mozzarella cheese, grated
Instructions
- Preheat oven to 350°F (175°C). Spray a 9×13 baking dish with cooking spray and spread half of the marinara sauce on the bottom of the dish.
- Bring a large pot of salted water to a boil. Add the pasta shells and cook until 3 minutes shy of al dente. Drain and rinse with cool water. Set the shells aside.
- In a large mixing bowl, combine the whipped cottage cheese, Parmesan cheese, egg, garlic, parsley, basil, salt, and pepper. Stir until well mixed.
- Fill each shell with the cheese mixture, and place the stuffed shells into the baking dish, nestling them into the marinara sauce.
- Pour the remaining marinara sauce over the stuffed shells and top with mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove the foil for the last 5 minutes to allow the cheese to brown and bubble.
- Allow to cool for a few minutes before serving. Enjoy!
