- 2 cups fresh spinach leaves
- 1 cup crumbled feta cheese
- 3 cloves garlic, minced
- 1/2 cup toasted pine nuts
- 1–1.5 pounds pork tenderloin
- 2 tbsp extra virgin olive oil (divided)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté minced garlic until fragrant (about one minute). Add fresh spinach and cook until wilted. Remove from heat and mix in crumbled feta cheese and toasted pine nuts.
- Using a sharp knife, carefully butterfly the pork tenderloin lengthwise without cutting all the way through, opening it like a book.
- Spread the spinach mixture evenly inside the butterflied pork tenderloin. Roll it up tightly.
- Use kitchen twine to tie the rolled pork tenderloin at intervals.
- In an oven-safe skillet over medium-high heat, sear each side of the stuffed pork tenderloin until browned (about three minutes per side). Transfer to the preheated oven and roast for about 25-30 minutes or until reaching an internal temperature of 145°F (63°C).
- Let rest for five minutes before slicing. Drizzle with olive oil or pan juices before serving.
