Irresistible Stuffed Italian Meatloaf: A Family Favorite Delight

- 2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 large eggs
- 1 cup marinara sauce
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups shredded mozzarella cheese
- sliced pepperoni or prosciutto (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly.
- Sauté the chopped onions and garlic in a skillet over medium heat until translucent, about 5 minutes. Let cool slightly.
- Combine all the ingredients in a large mixing bowl: ground beef, breadcrumbs, grated Parmesan, parsley, basil, sautéed onions and garlic, eggs, marinara sauce, Italian seasoning, salt, and pepper.
- Mix gently using your hands or a wooden spoon. Avoid overworking the meat to keep it tender.
- Shape the meat mixture into a rectangle on parchment paper, about 1 inch thick.
- Spread shredded mozzarella cheese evenly over the top of the meat mixture, leaving a small border. Optionally, layer in the pepperoni or prosciutto.
- Roll the meat into a log using the parchment paper to tightly enclose the cheese.
- Place the log seam side down on the prepared baking sheet.
- Spoon additional marinara sauce over the top to enhance flavor and moisture.
- Bake the meatloaf for approximately 60 minutes, or until it reaches an internal temperature of 160°F (70°C).
- Rest the meatloaf for 15-20 minutes before slicing.
- Garnish with extra fresh herbs before serving, if desired.
Notes
- Serve with a side of pasta or salad for a complete meal.
- Store leftovers in an airtight container in the fridge.
- Reheat in the oven to maintain texture.
