Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine 1 cup of melted unsalted butter, 1 cup of granulated sugar, and 1 cup of brown sugar. Mix until well combined.
  3. Add 2 large eggs and 2 teaspoons of vanilla extract to the mixture, stirring until smooth.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. In a medium bowl, combine 1 1/2 cups of chopped fresh strawberries with 1 tablespoon of cornstarch. Toss to coat the strawberries evenly. This will help thicken the filling as it bakes.
  7. Pour half of the batter into the prepared baking dish, spreading it evenly across the bottom.
  8. Sprinkle 1 cup of white chocolate chips over the batter, followed by the strawberry mixture. Finally, dollop the remaining batter on top, spreading it gently (it’s okay if some strawberries peep through).
  9. Bake in the preheated oven for 30-35 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean (a few moist crumbs are okay due to the gooey nature of the bars).
  10. Allow the bars to cool in the baking dish for about 1 hour. Once cooled, lift them out using the parchment paper (if used) and cut into squares.
  11. Dust with powdered sugar if desired before serving.
