- 1 tablespoon cornstarch: To help thicken the filling.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- In a large mixing bowl, combine 1 cup of melted unsalted butter, 1 cup of granulated sugar, and 1 cup of brown sugar. Mix until well combined.
- Add 2 large eggs and 2 teaspoons of vanilla extract to the mixture, stirring until smooth.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- In a medium bowl, combine 1 1/2 cups of chopped fresh strawberries with 1 tablespoon of cornstarch. Toss to coat the strawberries evenly. This will help thicken the filling as it bakes.
- Pour half of the batter into the prepared baking dish, spreading it evenly across the bottom.
- Sprinkle 1 cup of white chocolate chips over the batter, followed by the strawberry mixture. Finally, dollop the remaining batter on top, spreading it gently (it’s okay if some strawberries peep through).
- Bake in the preheated oven for 30-35 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean (a few moist crumbs are okay due to the gooey nature of the bars).
- Allow the bars to cool in the baking dish for about 1 hour. Once cooled, lift them out using the parchment paper (if used) and cut into squares.
- Dust with powdered sugar if desired before serving.
Notes
- Store bars in an airtight container at room temperature for up to 3 days.
- For longer storage, refrigerate for up to a week.
