Description
These Easy Strawberry Shortcake Bars feature a soft vanilla cake base, sweet strawberry filling, and a buttery crumb topping. A perfect summer dessert for parties, picnics, or family gatherings.

- 2 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup unsalted butter, cold and cubed
- 1/2 tsp salt
- 2 cups fresh strawberries, diced
- 1/3 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix flour, sugars, and salt. Cut in cold butter until mixture becomes crumbly.
- Press half of the crumb mixture firmly into the prepared pan to form the crust.
- Bake crust for 12–15 minutes until lightly golden.
- In another bowl, combine strawberries, sugar, cornstarch, and lemon juice. Stir gently.
- Spread strawberry mixture evenly over the warm crust.
- Sprinkle remaining crumb mixture over the top.
- Bake 30–35 minutes or until top is golden and filling is bubbly.
- Cool completely before slicing into bars.
