Ingredients

  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened (226 grams)
  • 1 ½ cups granulated sugar (300 grams)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup milk (240 mL)
  • 1¾ cups diced fresh strawberries (328 grams)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line muffin tin with paper liners or spray with non-stick spray.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, cream butter and sugar until light. Add eggs and vanilla, mixing well.
  5. Stir in milk until combined.
  6. Add dry ingredients to wet ingredients, mixing until just combined.
  7. Fold in strawberries gently.
  8. Fill muffin cups two-thirds full.
  9. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  10. Cool in tin for 5 minutes, then transfer to a cooling rack.
