Ingredients

- 3 cups all-purpose flour (360 grams)
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened (226 grams)
- 1 ½ cups granulated sugar (300 grams)
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup milk (240 mL)
- 1¾ cups diced fresh strawberries (328 grams)
Instructions
- Preheat oven to 375°F (190°C).
- Line muffin tin with paper liners or spray with non-stick spray.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light. Add eggs and vanilla, mixing well.
- Stir in milk until combined.
- Add dry ingredients to wet ingredients, mixing until just combined.
- Fold in strawberries gently.
- Fill muffin cups two-thirds full.
- Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
- Cool in tin for 5 minutes, then transfer to a cooling rack.
