Strawberry Cream Cheese Earthquake Cake is a delicious dessert combining strawberry flavors with a creamy cheese filling.
Ingredients
Scale
- 1 box (15.25 oz) strawberry cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, chopped
- 1/2 cup brown sugar
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large mixing bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Mix until well blended and smooth.
- Pour the cake batter into the prepared baking pan and spread it evenly.
- In another bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and well combined.
- Gently fold in the chopped strawberries into the cream cheese mixture.
- Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife or toothpick to swirl the cream cheese mixture into the batter, creating a marbled effect.
- Sprinkle the brown sugar and chopped walnuts evenly over the top of the batter.
- Place the cake in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and allow it to cool in the pan for about 15-20 minutes before transferring it to a wire rack to cool completely.
