- For the Strawberry Cake:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract

- 1/4 teaspoon salt
- 1 cup fresh strawberries (pureed)
- For the Chocolate Shell:
- 8 oz dark chocolate
- 1 tablespoon coconut oil
- For the Strawberry Frosting:
- 1/2 cup unsalted butter
- 2 cups powdered sugar
- 1/4 cup strawberry puree
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat softened unsalted butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk and strawberry puree, mixing until just combined.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
- In a heatproof bowl, combine chopped dark chocolate and coconut oil. Melt over a double boiler or in the microwave in 30-second intervals until smooth.
- In a medium bowl, beat softened unsalted butter until creamy.
- Gradually add powdered sugar and strawberry puree, mixing until smooth. Adjust the consistency with milk if needed. Stir in vanilla extract.
- Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of strawberry frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining strawberry frosting.
- Carefully pour the melted chocolate over the top of the frosted cake, allowing it to drip down the sides. Use a spatula to spread it evenly if needed.
- Allow the chocolate shell to set at room temperature or refrigerate for about 15-20 minutes until firm.
- Optionally, garnish with fresh strawberries or chocolate shavings.
- Slice the cake and serve. Enjoy the delightful combination of flavors!
