  • For the Chocolate Shell:
  • 8 oz dark chocolate
  • 1 tablespoon coconut oil
  • For the Strawberry Frosting:
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat softened unsalted butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk and strawberry puree, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  7. In a heatproof bowl, combine chopped dark chocolate and coconut oil. Melt over a double boiler or in the microwave in 30-second intervals until smooth.
  8. In a medium bowl, beat softened unsalted butter until creamy.
  9. Gradually add powdered sugar and strawberry puree, mixing until smooth. Adjust the consistency with milk if needed. Stir in vanilla extract.
  10. Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of strawberry frosting on top.
  11. Place the second cake layer on top and frost the top and sides of the cake with the remaining strawberry frosting.
  12. Carefully pour the melted chocolate over the top of the frosted cake, allowing it to drip down the sides. Use a spatula to spread it evenly if needed.
  13. Allow the chocolate shell to set at room temperature or refrigerate for about 15-20 minutes until firm.
  14. Optionally, garnish with fresh strawberries or chocolate shavings.
