Ingredients

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed graham crackers
  • 1/2 cup fresh strawberries, pureed or finely chopped
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil (optional)
  • Additional crushed graham crackers for rolling (optional)

Instructions

  1. In a mixing bowl, beat 8 oz of softened cream cheese with 1/2 cup of powdered sugar until smooth and creamy.
  2. Add 1 teaspoon of vanilla extract and mix until well combined.
  3. Fold in 1/2 cup of crushed graham crackers and 1/2 cup of pureed or finely chopped fresh strawberries until evenly distributed.
  4. Cover the bowl with plastic wrap and refrigerate the cheesecake mixture for about 1 hour.
  5. Once chilled, use a small cookie scoop or your hands to form the cheesecake mixture into small balls, about 1 inch in diameter.
  6. Place the formed balls on a parchment-lined baking sheet.
  7. In a microwave-safe bowl, combine 1 cup of white chocolate chips and 1 tablespoon of coconut oil (if using).
  8. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  9. Dip each cheesecake ball into the melted white chocolate, ensuring it is fully coated.
  10. Place the coated truffle back onto the parchment-lined baking sheet.
