Description
Soft cookies with fresh strawberries and a strawberry cream cheese filling baked into the center.
Ingredients

- 6 ounces cream cheese, softened
- ⅓ cup powdered sugar
- ½ teaspoon strawberry extract
- 3 cups all-purpose flour, spooned and leveled
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup salted sweet cream butter, softened (2 sticks)
- ⅔ cup granulated sugar
- ⅓ cup light brown sugar, packed
- 1½ teaspoons pure vanilla extract
- ½ teaspoon strawberry extract
- 1 large egg, room temperature
- 1 egg white, room temperature
- 1 cup fresh strawberries, capped, cored and finely chopped
- 1 tablespoon all-purpose flour
Instructions
- Beat cream cheese for 30 seconds until smooth.
- Mix in powdered sugar and strawberry extract.
- Beat for an additional 30 seconds until smooth.
- Line a baking sheet with parchment paper.
- Scoop out 24 dollops of cream cheese onto the prepared sheet, spacing them 2 inches apart.
- Press down on the dollops to make disks.
- Freeze while preparing cookie dough.
- Whisk flour, baking soda, and baking powder in a bowl.
- Beat softened butter for 1-1½ minutes until smooth.
- Add sugars and mix for 1 minute until fluffy.
- Add vanilla and strawberry extract, mixing until combined.
- Add eggs one at a time, mixing well after each.
- Lower mixer speed and add flour 1 cup at a time, mixing just until incorporated.
- Toss chopped strawberries in 1 tablespoon of flour.
- Add strawberries to the batter and mix gently.
- Chill batter in the refrigerator for 1 hour.
- Preheat oven to 375°F and line 2 baking sheets with parchment paper.
- Scoop 24 dollops of cookie dough and place 2 inches apart on sheets.
- Remove cream cheese disks from freezer.
- Place 1 cream cheese disk in the center of each cookie dough.
- Encase cream cheese with cookie dough.
- Bake for 12-14 minutes until edges are golden brown.

- Store cookies in an airtight container.
- Best served fresh.
