Description

Ingredients

  • ⅓ cup powdered sugar
  • ½ teaspoon strawberry extract
  • 3 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup salted sweet cream butter, softened (2 sticks)
  • ⅔ cup granulated sugar
  • ⅓ cup light brown sugar, packed
  • 1½ teaspoons pure vanilla extract
  • ½ teaspoon strawberry extract
  • 1 large egg, room temperature
  • 1 egg white, room temperature
  • 1 cup fresh strawberries, capped, cored and finely chopped
  • 1 tablespoon all-purpose flour

Instructions

  1. Beat cream cheese for 30 seconds until smooth.
  2. Mix in powdered sugar and strawberry extract.
  3. Beat for an additional 30 seconds until smooth.
  4. Line a baking sheet with parchment paper.
  5. Scoop out 24 dollops of cream cheese onto the prepared sheet, spacing them 2 inches apart.
  6. Press down on the dollops to make disks.
  7. Freeze while preparing cookie dough.
  8. Whisk flour, baking soda, and baking powder in a bowl.
  9. Beat softened butter for 1-1½ minutes until smooth.
  10. Add sugars and mix for 1 minute until fluffy.
  11. Add vanilla and strawberry extract, mixing until combined.
  12. Add eggs one at a time, mixing well after each.
  13. Lower mixer speed and add flour 1 cup at a time, mixing just until incorporated.
  14. Toss chopped strawberries in 1 tablespoon of flour.
  15. Add strawberries to the batter and mix gently.
  16. Chill batter in the refrigerator for 1 hour.
  17. Preheat oven to 375°F and line 2 baking sheets with parchment paper.
  18. Scoop 24 dollops of cookie dough and place 2 inches apart on sheets.
  19. Remove cream cheese disks from freezer.
  20. Place 1 cream cheese disk in the center of each cookie dough.
  21. Encase cream cheese with cookie dough.
  22. Bake for 12-14 minutes until edges are golden brown.
