Description

Juicy honey garlic glazed chicken thighs roasted alongside broccoli, carrots, peppers, and potatoes for a simple and flavorful one-pan dinner.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 cups broccoli florets
  • 2 large carrots, peeled and cut into sticks
  • 1 red bell pepper, chopped
  • 2 cups diced potatoes
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch (optional)
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread broccoli, carrots, bell pepper, and potatoes on a sheet pan. Toss with olive oil, salt, and pepper.
  3. Season chicken thighs with paprika, black pepper, and salt. Add them to the pan.
  4. Whisk honey, soy sauce, garlic, vinegar, and optional cornstarch.
  5. Brush half the glaze over the chicken and vegetables.
  6. Roast 25 minutes, brush with remaining glaze, and roast another 15–20 minutes until chicken reaches 165°F.
  7. Garnish with parsley and serve warm.
