Steak-Stuffed Baked Potatoes with Parmesan Cream Sauce

  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 pound sirloin steak (or your choice of beef)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper (to taste)
  • 1 tablespoon fresh parsley (chopped, for garnish)
  • 1 tablespoon unsalted butter
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper (to taste)
  • 1/2 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes under cold water and pat them dry. Prick each potato several times with a fork to allow steam to escape. Rub the potatoes with olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, season the sirloin steak with olive oil, garlic powder, onion powder, salt, and pepper.
  5. Heat a skillet over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or adjust cooking time to your desired doneness.
  6. Remove the steak from the skillet and let it rest for 5 minutes before chopping it into bite-sized pieces.
  7. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  8. Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese, and continue to stir until the cheese is melted and the sauce is smooth. Season with salt, pepper, and Italian seasoning if using.
  9. Once the baked potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  10. Spoon the chopped steak into each potato, generously filling them.
  11. Drizzle the Parmesan cream sauce over the stuffed potatoes, ensuring each one is well-coated.
  12. Sprinkle with fresh chopped parsley for a pop of color and added flavor.
  13. Serve the steak-stuffed baked potatoes warm and enjoy this decadent meal!
