Steak-Stuffed Baked Potatoes with Parmesan Cream Sauce

- 4 large russet potatoes
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 1 pound sirloin steak (or your choice of beef)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

- 1 tablespoon fresh parsley (chopped, for garnish)
- 1 tablespoon unsalted butter
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper (to taste)
- 1/2 teaspoon Italian seasoning (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the russet potatoes under cold water and pat them dry. Prick each potato several times with a fork to allow steam to escape. Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, season the sirloin steak with olive oil, garlic powder, onion powder, salt, and pepper.
- Heat a skillet over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or adjust cooking time to your desired doneness.
- Remove the steak from the skillet and let it rest for 5 minutes before chopping it into bite-sized pieces.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese, and continue to stir until the cheese is melted and the sauce is smooth. Season with salt, pepper, and Italian seasoning if using.
- Once the baked potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Spoon the chopped steak into each potato, generously filling them.
- Drizzle the Parmesan cream sauce over the stuffed potatoes, ensuring each one is well-coated.
- Sprinkle with fresh chopped parsley for a pop of color and added flavor.
- Serve the steak-stuffed baked potatoes warm and enjoy this decadent meal!
