- 1 pound sirloin or flank steak
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup long-grain white rice
- 2 cups beef broth or water
- 1/2 teaspoon salt
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 teaspoon paprika
- Salt to taste
- Chopped cilantro
- Diced tomatoes
- Sliced green onions
- Avocado slices
Instructions
- Combine rice, broth (or water), and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer 15–18 minutes until tender. Fluff with a fork.
- Rub steak with olive oil and seasonings. Cook in a hot skillet 4–5 minutes per side. Rest, then slice thinly against the grain.
- Melt butter, stir in flour, and cook 1 minute. Whisk in milk and cook until thickened. Add cheeses and paprika, stirring until smooth. Season with salt.
- Spoon rice into bowls, top with sliced steak, and drizzle with warm queso sauce.
- Add desired toppings and serve immediately.
