Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 cup apple butter
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick spray.
  2. In a stand mixer, cream together the butter and sugar until fluffy.
  3. Add the vanilla extract and egg, beating until fully combined. Mix in the apple butter.
  4. Slowly add the flour, baking soda, salt, and spices (ginger, cinnamon, cloves, nutmeg) to the mixture and stir until combined.
  5. Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. To make the frosting, beat the cream cheese with vanilla extract. Gradually add powdered sugar and mix until smooth and creamy.
  8. Once the loaf is completely cool, spread the cream cheese frosting on top and optionally sprinkle with chopped walnuts. Slice and serve.
