- 1/2 cup unsalted butter, room temperature
- 1 cup sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 1 cup apple butter
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick spray.
- In a stand mixer, cream together the butter and sugar until fluffy.
- Add the vanilla extract and egg, beating until fully combined. Mix in the apple butter.
- Slowly add the flour, baking soda, salt, and spices (ginger, cinnamon, cloves, nutmeg) to the mixture and stir until combined.
- Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- To make the frosting, beat the cream cheese with vanilla extract. Gradually add powdered sugar and mix until smooth and creamy.
- Once the loaf is completely cool, spread the cream cheese frosting on top and optionally sprinkle with chopped walnuts. Slice and serve.
