Ingredients

  • 1 pound dried green split peas, rinsed
  • 6 cups vegetable broth
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add garlic, thyme, and black pepper. Stir for 1 minute.
  3. Pour in vegetable broth and add rinsed split peas and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes or until peas are tender.
  5. Remove bay leaf. For a smoother texture, blend part or all of the soup using an immersion blender or in batches in a regular blender.
  6. Serve hot.
