Description
A crisp and refreshing spiral-cut cucumber salad tossed in a bold Korean-inspired chili sesame dressing.
Ingredients

- 3 cucumbers (Persian or English)
- 2 cloves garlic (minced)
- 2 green onions (sliced)
- 1 tbsp Korean red chili flakes
- 1 tbsp rice vinegar
- 1 tsp soy sauce
- 1 tsp sugar
- 0.5 tsp salt
- 1 tsp sesame oil
- 1 tsp sesame seeds (toasted)
Instructions
- Spiral cut cucumbers using chopsticks as guides.
- Salt cucumbers and let sit 10 minutes.
- Rinse and pat dry.
- Mix garlic, chili flakes, vinegar, soy sauce, sugar, and sesame oil.
- Toss cucumbers with dressing and green onions.
- Top with sesame seeds and serve.
