Description
This spinach artichoke dip is creamy, cheesy, and full of flavor. It’s a great appetizer for parties and gatherings.

- 12 oz artichoke hearts (drained)
- 1 cup frozen spinach (thawed and drained)
- 8 oz cream cheese (softened)
- ⅓ cup mayonnaise
- ½ cup Locatelli Romano cheese (or Parmesan cheese)
- ½ cup sharp cheddar cheese (shredded)
- 2 tablespoons garlic (minced)
- 1 tsp lemon juice
- 1 tablespoon fresh thyme
- ½ teaspoon sea salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 350 degrees F.
- Drain and pat the artichoke hearts dry with a paper towel. Do the same with the spinach as well to remove any excess moisture.
- Chop the artichoke hearts into smaller pieces.
- Add the softened cream cheese, mayonnaise, Romano cheese, artichoke hearts, chopped spinach, and cheddar cheese to a large mixing bowl.
- Mix well to combine.
- Add the fresh thyme, sea salt, black pepper, and garlic to the spinach and artichoke dip mixture.
- Mix well to combine.
- Add the mixture to a cast-iron pan or a casserole dish and spread it across in an even layer.
- Place it on the center rack of the preheated oven and bake for 20-25 minutes until it begins to brown. For a golden top place under the broiler for a few minutes once baked.
- Allow the dip to rest for 5 minutes to set up once removed from the oven.
