Description

This spinach artichoke dip is creamy, cheesy, and full of flavor. It’s a great appetizer for parties and gatherings.


Ingredients

  • 12 oz artichoke hearts (drained)
  • 1 cup frozen spinach (thawed and drained)
  • 8 oz cream cheese (softened)
  • ⅓ cup mayonnaise
  • ½ cup Locatelli Romano cheese (or Parmesan cheese)
  • ½ cup sharp cheddar cheese (shredded)
  • 2 tablespoons garlic (minced)
  • 1 tsp lemon juice
  • 1 tablespoon fresh thyme
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. Drain and pat the artichoke hearts dry with a paper towel. Do the same with the spinach as well to remove any excess moisture.
  3. Chop the artichoke hearts into smaller pieces.
  4. Add the softened cream cheese, mayonnaise, Romano cheese, artichoke hearts, chopped spinach, and cheddar cheese to a large mixing bowl.
  5. Mix well to combine.
  6. Add the fresh thyme, sea salt, black pepper, and garlic to the spinach and artichoke dip mixture.
  7. Mix well to combine.
  8. Add the mixture to a cast-iron pan or a casserole dish and spread it across in an even layer.
  9. Place it on the center rack of the preheated oven and bake for 20-25 minutes until it begins to brown. For a golden top place under the broiler for a few minutes once baked.
  10. Allow the dip to rest for 5 minutes to set up once removed from the oven.
