Description

This Spicy Vegan Peanut Noodle Stir Fry is the ultimate quick comfort meal, packed with bold flavors, creamy peanut sauce, and crunchy veggies—perfect for busy nights.


Ingredients

  • 8 ounces udon or rice noodles, cooked
  • 1 cup shredded carrots
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • ¼ cup natural peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 to 2 tablespoons chili garlic sauce or sriracha
  • 1 tablespoon sesame oil
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • ¼ cup roasted peanuts, chopped
  • 1 tablespoon neutral oil
  • Salt to taste

Instructions

  1. Heat oil in a large skillet or wok over medium heat.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, chili garlic sauce, sesame oil, and lime juice. Add a splash of warm water to thin, if needed.
  3. Add garlic and ginger to the hot pan. Sauté for 30 seconds until fragrant.
  4. Toss in the shredded carrots and cooked noodles. Stir to combine, then pour in the peanut sauce.
  5. Stir-fry for 2 to 3 minutes until noodles are well coated and heated through.
  6. Remove from heat and stir in chopped cilantro.
  7. Plate the noodles, top with crushed peanuts and extra lime wedges, and dig in!
