- 8 ounces udon or rice noodles, cooked
- 1 cup shredded carrots
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- ¼ cup natural peanut butter
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 to 2 tablespoons chili garlic sauce or sriracha
- 1 tablespoon sesame oil
- Juice of 1 lime
- ¼ cup fresh cilantro, chopped
- ¼ cup roasted peanuts, chopped
- 1 tablespoon neutral oil
- Salt to taste
Instructions
- Heat oil in a large skillet or wok over medium heat.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, chili garlic sauce, sesame oil, and lime juice. Add a splash of warm water to thin, if needed.
- Add garlic and ginger to the hot pan. Sauté for 30 seconds until fragrant.
- Toss in the shredded carrots and cooked noodles. Stir to combine, then pour in the peanut sauce.
- Stir-fry for 2 to 3 minutes until noodles are well coated and heated through.
- Remove from heat and stir in chopped cilantro.
- Plate the noodles, top with crushed peanuts and extra lime wedges, and dig in!
