  • 2 tablespoons vegetable oil
  • 1 pound skinless, boneless chicken thighs, coarsely chopped
  • ¼ cup sliced shallots
  • 4 cloves garlic, minced
  • 2 tablespoons minced Thai chilies (or to taste)
  • 1 cup very thinly sliced fresh basil leaves
  • 2 cups hot cooked rice, for serving

Instructions

  1. Gather all your ingredients.
  2. In a small bowl, whisk together the chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar until well combined.
  3. Heat a large skillet over high heat. Add the vegetable oil.
  4. Add the chopped chicken thighs and stir-fry until they lose their raw appearance, about 2-3 minutes.
  5. Add the sliced shallots, minced garlic, and minced Thai chilies to the skillet. Continue stir-frying over high heat for 2-3 minutes until some caramelization occurs at the bottom of the pan.
  6. Pour about 1 tablespoon of the prepared sauce mixture into the skillet. Stir and cook for about 1 minute until it begins to caramelize.
  7. Add the remaining sauce to the pan. Stir to deglaze the pan, incorporating the browned bits.
  8. Continue cooking until the sauce reduces slightly and coats the chicken with a glossy finish, about 1-2 minutes.
  9. Remove the pan from heat. Immediately stir in the fresh basil leaves. Cook and stir for about 20 seconds until the basil is wilted.
