- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 2 teaspoons fish sauce
- 1 teaspoon white sugar
- 1 teaspoon brown sugar
- 2 tablespoons vegetable oil
- 1 pound skinless, boneless chicken thighs, coarsely chopped
- ¼ cup sliced shallots
- 4 cloves garlic, minced
- 2 tablespoons minced Thai chilies (or to taste)
- 1 cup very thinly sliced fresh basil leaves
- 2 cups hot cooked rice, for serving
Instructions
- Gather all your ingredients.
- In a small bowl, whisk together the chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar until well combined.
- Heat a large skillet over high heat. Add the vegetable oil.
- Add the chopped chicken thighs and stir-fry until they lose their raw appearance, about 2-3 minutes.
- Add the sliced shallots, minced garlic, and minced Thai chilies to the skillet. Continue stir-frying over high heat for 2-3 minutes until some caramelization occurs at the bottom of the pan.
- Pour about 1 tablespoon of the prepared sauce mixture into the skillet. Stir and cook for about 1 minute until it begins to caramelize.
- Add the remaining sauce to the pan. Stir to deglaze the pan, incorporating the browned bits.
- Continue cooking until the sauce reduces slightly and coats the chicken with a glossy finish, about 1-2 minutes.
- Remove the pan from heat. Immediately stir in the fresh basil leaves. Cook and stir for about 20 seconds until the basil is wilted.
- Serve your spicy Thai basil chicken immediately over hot cooked rice.
